Serves: 2 cups
Ingredients
  • ¼ cup water
  • 12 oz frozen raspberries (about 2½ cups) (I used FRESH!)
  • ⅓ cup granulated sugar
  • 1 tbsp freshly squeezed lemon juice (I used from a bottle)
  • 2 tbsp cold water
  • 2 tbsp cornstarch
  • ½ tsp vanilla
  • dash of salt
Instructions
  1. Put ¼ cup of water, frozen raspberries, freshly squeezed lemon juice and granulated sugar in a saucepan.
  2. Cook for about 5-7 minutes, over medium heat until the raspberries start to break down, stirring often.
  3. In a small bowl, mix together cornstarch and 2 tablespoons of cold water. Stir the mixture into the raspberry sauce.
  4. Cook for 30-60 seconds, until thickened.
  5. Remove from heat and stir in the vanilla and salt.
  6. Allow the raspberry sauce to cool and pour it into a container.
  7. Store in the fridge.
